Recipe: Tortilla

One of my favourite Spanish dishes is the tortilla. This is the Spanish version of the omelet and is very simple to make because it consists only of eggs, potatoes and onion. I just cooked one for my family and it was a big hit (once we got past the surprise that this is NOT one of those mexican flat bread things). You can slice the tortilla up as it is and serve it hot or cold. I’ve also had tortilla sandwiches made using baguette bread, which you make by slicing open the baguette lengthwise and filling it with slices of tortilla. The tortilla makes this similar to a meatloaf sandwich! Anyways, here’s a recipe you can make to try out some of the flavours of Spain in your own home!

Ingredients:

  • 500 g potatoes (about 5-6)
  • 1 onion
  • salt
  • 6 eggs
  • olive oil

1. Peel the potatoes than cut them in half lengthwise and then slice them into two or three pieces before slicing them the other way into 1/8 inch thick pieces. Season the potatoes with salt 2. Chop up the onion. 3. Mix the potatoes and the onion together. 4. Heat the olive oil in a large non-stick skillet and fry the potatoes and onions (you might need to adjust the heat so the potatoes don’t burn!). Let the potatoes and onions fry until the potatoes are cooked then remove everything from the frying pan and allow the oil to drain. 5. Beat the eggs in bowl and mix in the potatoes and onions. 6. Add two tablespoons of oil and heat the frying pan on medium. Then add the egg mixture. 7. Allow the edges of the tortilla to cook and check for browning on the bottom using a spatula to lift up the edges. Once the tortilla has browned on the bottom it is time to flip it over. Do this with the help of a plate. Allow the tortilla to fall onto the plate then add just enough oil to cover the bottom of the frying pan then slide the tortilla back into the pan to cook the other side. 8. Shape the sides of the tortilla using the spatula and allow it to cook for 3-4 more minutes. Turn off the heat and allow the tortilla to stand for two minutes before removing it from the pan. Serves 6.

Again you can serve tortilla hot or stick it in the fridge and serve it cold. Also, you can garnish it with ketchup and/or mayonnaise if desired.
